Bizou American Brasserie

Bizou American Brasserie, located in upscale Pacific Place mall, is a welcome addition to the city's already impressive line-up of American eateries. Still, this new kid on the block has managed to impress. Under Head Chef Juan Velazquez, Bizou has crafted a distinctive menu that combines classic and traditional American cuisines with a touch of Cali-Mex influence, reflective of Chef Juan's own culinary experience while working in California. Bizou also serves an excellent collection of beers, wines and cocktails.
 
The outlet's alfresco setting opens up to the lobby entrance of the mall, while indoors, the outlet is outfitted with a pleasing brasserie ambience. Bizou serves a broad menu but we chose its Set Dinner ($398/person) plus Wine Pairing ($168/person for 3 glasses).
The dinner started with a choice of Organic Tomato Salad, Buffalo Mozzarella and Honey Balsamic Dressing or Beef Tartare, Homemade Pickle, Onion Marmalade, Egg, and Honey Mustard. Both portions are generous, and both are excellent. A light Stoneburn Sauvignon Blanc 2017 from Marlborough in New Zealand pairs nicely with the dishes.
 
We ordered an extra dish that turned out to be a real hit – Steamed Mussels, Roasted Leeks with White Wine and Parsley Butter ($158) – we really liked the sauce and happily lapped it up with bread.
 
For the mains, we had a choice of 48-hour Slow-cooked Short Ribs with Potato Emulsion and Rosemary Sauce or Homemade Malfatti, Spinach, Ricotta, and Mushroom Truffle Sauce. Both dishes are winners. The meat off the short ribs is tender and practically falls off the bones. And the malfatti dough is densely kneaded and infused with truffle and spinach flavour, and quite filling, A dry and fruity Stellenbosch Spier Pinotage 2016 from South Africa goes well with the short ribs.
