Fu Rong

Trying out upscale Sichuan cuisine is always an experience. It takes real culinary prowess to create delicate dishes that are not drowned out by the spicy Sichuan flavours. Fu Rong, a newly opened restaurant in the blossoming Ocean Terminal Extension (OTE) wing, fits the bill nicely.
 
Fu Rong occupies an impressive space at OTE, with panoramic views of the harbour. The restaurant serves refined Chengdu cuisine that is gentler on the palate than the more overpowering hot and spicy Chongqing-style cooking. Fu Rong aims to recreate a Chengdu royal banquet, and their dishes pack all the sophistication and refinement you would expect.
 
Our tasting menu certainly lived up to its billing. We started with two canapes: Chong Zhou Vegetables Rolls, Crab Leg, Shrimp ($128) and Assorted Sichuan Skewers, Vegetables ($148). The appetisers included Abalone, Green Sichuan Peppercorn Sauce ($168) , Onsen Quail Egg, Crispy Shredded Potato ($108), and the classic Thinly Sliced Pork Belly, Cucumber, Garlic Marmalade ($148).
 
One of Fu Rong's specialties came next – Hot & Sour Soup ($88 per person), which has a moreish sweet-and-sour taste. The main dishes included Oil-Poached Chinese Perch, Fried Chili, Sichuan Pepper ($498) that had us begging for more – the tender fish fillet soaked in hot oil and pepper is pleasantly numbing. Poached Lobster, Sichuan Pepper Sauce ($568) was fresh and tender and another winner.
 
After enjoying Pear, Snow Fungus, Crystal Soup as a palate cleanser, we samples more mains, including Seared A5 Wagyu Beef, Green Sichuan Peppercorn Sauce ($698) and Braised Iberico Pork, Cheek, Giant Grouper Skin, Spicy Gravy ($338). We finished this sumptuous tasting experience with Stewed Cabbage, Golden Soup ($148), Chongqing Noodles, Wagyu Beef (488/person), which is delicious, Rice Porridge, Shrimps, Green Asparagus ($88 per person) and Fu Rong has managed to fill an enviable niche, serving high- end Sichuan cuisine with refined flavours. The whole experience is impressive. To enjoy a spicy meal in a classy setting, we strongly recommend Fu Rong.
