Dong Lai Shun welcomes new Head Chef Sze Chiu-kwan and presents an array of Chinese tea delicacies

The Royal Garden welcomes Chef Sze Chiu-Kwan to rejoin Dong Lai Shun as Head Chef! With over 18 years of culinary experience, Chef Sze has worked for the famed Shanghainese restaurant Liu Yuan Pavilion and was appointed Head Chef of Dong Lai Shun in 2004 before joining JIN CUISINE (located at Holiday Inn Express Hong Kong Kowloon East) as Head Chef.

As Shanghainese cuisine is Chef Sze’s expertise, he thoroughly understands its characteristics and creates every dish with the finest ingredients, perfect combination of flavours, and of course enticing presentation.

This spring, Chef Sze has created a splendid array of refreshing dishes using Chinese tea as the ingredient to surprise and delight diners! Well loved by Chinese, tea is inseparable from Chinese dining culture. Each tea has its own nutritional value, for example, green tea is said to be good for anti-oxidation and beneficial to intestines.

Chef Sze beautifully demonstrates his passion for tea in these dishes. Using seafood as the main ingredients, the delightful dishes include pan-fried spotted garoupa fillet with Bi Luo Chun tea, poached crispy rice and assorted seafood in jasmine tea, sautéed shrimps with Long-jin tea, pan-fried scallops with Dragon Pearl tea, and smoked small croaker fish/river eel with Long-jin tea flavor. The unique aroma of the teas perfectly incorporates with the fresh seafood, leaving diners with good memories of spring.

If you are not a seafood fan, Chef Sze has also prepared other delicacies including, wok-fried diced Wagyu beef with Tie Guan Yin tea, marinated chicken in Jin Jun Mei tea and poached eight treasures vegetables in Long-jin tea.
