Fish and Meat: Fresh tastes in Town

Alongside taste and presentation, sustainability is increasingly prominent in culinary art these days. And while Hong Kong is never short of excellent restaurants serving delicious cuisines from across the globe, for many, being ecoconscious is not a top priority. However, Fish & Meat, a modern eatery located in the heart of town, offers sustainable western cuisine with a huge emphasis on in-season cooking. Their “farm-to-table” philosophy also ensures that ingredients are processed as little as possible, combined with a solid cooking style that keep things simple and tasty.
 
Kickstarting our meal was the Crispy Fried Whitebait (HK$90) with spicy aioli sauce, a popular appetiser accompanied by a beer. But our vote among the pre-mains goes to the Devon Crab Salad (HK$110) – the quinoa is aromatic, and the tiny sweet mango cubes amid the crab meat make it a light yet flavoursome dish – we highly recommend it.
 
 
Oven Roasted Indian Ocean Tiger Prawns
 
 
Our first main was the Oven-Roasted Indian Ocean Tiger Prawns (HK$185), marked by crunchy texture and smoky flavour. The chili and charred corn underneath manage to add a nice kick, rendering a rather punchy affair. We then took things up a notch with the Fresh Sea Urchin and Squid Linguine (HK$340), the most sumptuous dish of our meal. The homemade pasta is al dente, while the sea urchin and salmon roe are delightfully rich, though slightly hindered by the garlic chili which we found a touch overpowering.
 
 
Australian Blue Mussels
 
Like all the dishes, the Australian Blue Mussels (HK$200) and Pan-fried Barramundi (HK$200) deliver spanking-fresh ingredients and colourful presentations. Although the chef boasts a simple, straightforward style of cooking, it is clear that a lot of thought has gone into the design of Fish & Meat’s dishes to achieve the intricate harmony on offer here.
 
Besides the food, the drinks here are also worth trying – we opted for The Southern (HK$120), a whisky-based cocktail featuring lavender-infused honey, which impressed us with its beautiful presentation and sweet aroma. For non-drinkers, the Elderflower Fizz (HK$80) is well-suited to the hot weather thanks to the refreshing mint and orange blossom.

As we enjoyed the wholesome food here at Fish & Meat, we also appreciated the philosophy behind the operation. As well as sourcing seasonal ingredients to conserve food resources, the team is keen to support environmental causes – whenever you order the Salmon Tartare (HK$110), ten percent of the profit is donated to the Plastic Oceans Foundation, a UK charity group dedicated to the protection of marine life. In Hong Kong where profit-making is front and centre of most operations, it is always heartening to find a business that is also devoted to the greater good.
